The Secret of MARTINI® is guarded under lock and key
Luigi’s 1863 formula for Rosso is known to only four individuals alongside the later recipes for Extra Dry, Bianco and Rosato
These compositions detail the exact combinations and preparations of over 40 individual botanicals
It represents a lifetimes’ work in harnessing and blending natural botanicals to give the most rounded and perfectly balanced taste
Today our formula is safely stored in Geneva vault and we remain faithful to the original compositions

Our most complex secret is how we capture the tastes, aromas, and textures of our natural botanicals
For over 18 years Ivano has been in charge of overseeing the search for the best botanical ingredients from across the globe
Over 40 Botanicals are used coming from all continents
Botanicals arrive with us in their natural form having been dried slowly using traditional techniques to preserve their aromatic character

Once received every botanical is quality checked again
All botanicals vary with each harvest and we must guarantee both the quality and character
to remain faithful to our formulation
Ivano and his team make their assessment by touch, taste and smell. We retain only the best
Sampling over 500 botanical samples a year they keep the benchmark for quality locked within their memories
The slow turn
Once selected the aromatic essence of the botanicals must be captured
A specific blend of Botanicals with some natural alcohol are placed in the unique ‘tamburo’
The ‘tamburo’ gently turn the botanicals. They move slowly, making only two rotations a day, any faster would impart overly bitter characters.
They turn for two to four weeks to create a pure elixir
Distillation
For MARTINI® Rosato and Extra Dry we need some very light elixir produced from delicate fruits
Pessione houses a pair of English Pot Stills which are used to create those elixirs
The botanicals are mixed with natural alcohol then distilled to produce a very fine ‘top note’ aromatic
Blending and Finishing
Department ’54 is the where the marriage of MARTINI® is made
Each ingredient is slowly blended together in a precise order without pressure or heat
Once we achieve the perfect marriage between wines and botanicals we add pure natural alcohol to preserve the botanicals and natural sugar for balance
The blend is then ‘rested’ or Il Riposo as we call it in order to marry together
Finally it is chilled to -8C in “Il Frigo” just above freezing to capture and preserve all the delicate flavours
MARTINI BIANCO

Gentle, soft, harmonious
Launched in 1910, MARTINI® Bianco earned the name ‘Bianchissimo’ or the whitest, inspired by the white flowers of the vanilla plant.
At its heart is a combination of herbs and sweet, floral spices producing a softer, lighter and more delicate style.
The botanicals give a slight bitterness but it is harmonious and easy to approach. The blend is a well-balanced mixture between the vanilla notes and the aromatic herbs; between both sweet and bitter notes.
MARTINI ROSSO

Rich, complex and perfumed
Luigi Rossi’s original recipe developed in the 1860’s that became one of the most celebrated and decorated of Piedmont’s aromatic wines. The recipe has been passeddown through each of our individual Master Herbalists.
The highly perfumed bitter-sweet edge and herbal character make it a naturally refreshing company.
The botanicals are powerful in character, rich and complex. At its core are a large proportion of Italian herbs: artemisia, summer savory and dittany balanced with exotic bitter-sweet woods.
MARTINI ROSATO

Spiced, refined, elegant
The MARTINI® quest to explore styles of aperitif has continued throughout their history.
It was a complex task to create a new MARTINI® in the modern era, but our craftsman dedicated
themselves to the challenge and found new inspiration in the journals of Luigi Rossi.
Rosato blends deep notes of cloves , cinnamon and nutmeg with the lighter aromatics of raspberry and lemon. A particularly delicate infusion process to create a soft-toned, perfumed spiced style.
MARTINI EXTRA DRY

Zesty, fragrant, light
In 1890 of Luigi Rossi’s sons began to develop a recipe to create a new MARTINI® style.
As much the perfectionists as their father it took nearly 10 years before on New Year’s Day 1900 at the beginning of the new millennium MARTINI® Extra Dry was finally unveiled .
MARTINI® Extra Dry uses a complex blend in order to deliver the delicate key notes of the many botanicals it uses.
Starbright, pale gold with a delicate perfume you may perceive notes from the raspberry and lemon distillates over a background of orris, with slight touches of wood all finishing with well-balanced fresh acidity.
