HERRADURA
Casa Herradura Production Process
Step 1: Agave plants
Casa Herradura owns the majority of the plants.
-> High quality agave plants - High sugar level and good health plants
“Jimadores” harvest (jima) the agave plants close to the heart avoiding bitterness
Step 2: Cooking
We use traditional clay ovens - It takes more time but we get the best juices
(slow heating process taking 24 – 26 hrs vs. 8-12 in “autoclaves” – stainless steel)
Step 3: Fermentation
Natural fermentation – no human intervention
At the most 96 hours
Process uses only wild airborne yeasts
Step 4: Distillation
Double step distillation cutting heads (methanol) and tails (vinasas) in both processes
Distilled to a lower proof to get the best alcohols
First distillation up to 25% abv
Second distillation up to 46-55 % abv
Step 5: Aging
New white American oak barrel
200 liters barrels
We DO NOT USE CARAMEL or other colorants
Remember, it takes around 8 - 9 years to produce the bottle that is in your hands
-> Tequila is very complex and versatile
